Back to school, back to scrapping...


I blinked my eyes and the summer was gone! Is it just me or what's going on??? I loooong for more warm summery nights...sitting on the front porch, sipping an ice tea. I'm having a hard time coming to grips with this.
There's only one consolation...the chilly weather stirs up a desire to pull out my embellishments, flip through my papers, and CREATE!

Gingersnaps-SOOO Yummy!

3/4 cup hard margarine or butter, softened
1 cup granulated sugar
1 egg
1/2 fancy molasses

2 1/2 cups All-purpose flour
2 tsp Baking soda
2 tsp Ginger
1 tsp ground cinnamon
1/2 tsp salt

1/4 (approx) granulated sugar

Cream margarine and first amount of sugar in large bowl. Add egg and molasses. Beat well.

Combine next 5 ingredients in medium bowl. Add to margarine mixture in 2 additions, mixing well after each addition until no dry flour remains. Roll into 1 inch balls.

Roll balls in second amount of sugar in small bowl until coated. Arrange about 2 inches apart on greased cookie sheets. Bake in 350 oven for about 10 mins. Let stand on cookie sheets for 5 mins. Remove cookies from cookie sheets and place on wire racks to cool. Makes about 90 cookies.

Mad Hatter Salad!

Ingredients:

1 (16 ounce) package coleslaw mix
8 green onions, chopped (I don't use this many)
1/2 cup butter or margarine
1 head fresh broccoli, cut into florets
2 (3 ounce) packages chicken flovoured ramen noodles (Mr. Noodles!)
1 cup slivered almonds
1 cup unsalted sunflower seeds
1/2 cup white sugar
1/4 cup apple cider vinegar
1/2 cup vegetable oil
1 teaspoon soy sauce

Directions:

1. In a large bowl, toss together the coleslaw mix, green onions and broccoli. Set aside.
2. Melt the butter in a large skillet over medium heat. Crumble the ramen noodles into a bowl, and mix with the almonds and sunflower seeds. Sprinkle the seasoning packets over all. Add to the skillet; cook and stir until noodles and nuts are toasted, about 8 minutes.
3. In a jar (with a tight fitting lid), combine sugar, vinegar, oil and soy sauce. Seal, and shake vigorously to blend.
4. Just before serving, combine the coleslaw mixture with the nuts and noodles. Pour the dressing over all, and stir briefly to coat.

Makes 12 servings

Vegetable Pasta Salad!

O.K. ladies...here's the recipe for the pasta salad that we served at our "Picture This" event on May 1st! ENJOY :)
Keep in mind that it's a GREAT make ahead dish...it's even YUMMIER the day after you make it!!!

rotini pasta (can use penne) 3 1/3 cups
boiling water 3 L
cooking oil (optional) 1 tbsp
salt 2 tsp

red pepper, slivered- 1
sliced green onions 1/4 cup
fresh mushrooms, sliced- 6
sliced celery (optional) 1/2 cup
zucchini, slivered (optional) 1 to 2 cups

cooking oil 1/3 cup
red wine vinegar 1/4 cup
grated parmesan cheese 2 tbsp
salt 1 tsp
pepper 1/4 tsp
oregano 1/4 tsp
basil 1/4 tsp
garlic powder 1/4 tsp

In large uncovered saucepan cook pasta in boiling water, cooking oil and first amount of salt until tender but firm. Drain. Rinse with cold water. Drain well. Return to pot.

Add next 5 ingredients to rotini in pot.

Mix remaining ingredients together in small bowl. Add to pot and toss well. Makes about 8 cups.
